Dress Up Your Chicken: Who Says Poultry Has to be Plain?

Everyone has been complaining to me lately that they've had chicken so much lately for dinner! I'm certain that it's because they haven't spiced their chicken up a bit and used it in more ways than just a bird on a plate.
With that said, I've decided to take a stand and show everyone that chicken doesn't always have to be plain, with these recipes I've whipped up just for you.

- Chicken Saltimbocca-http://www.cindystable.com/chicken-saltimbocca/
The prosciutto makes for a creative spin and for a flavorful meal. This recipe is a one-pan wonder and very easy for any night of the week. You can serve it with pasta, potatoes, or roasted vegetables.

-Italian Chicken Soup-
Everyone loves a good chicken soup and this just so happens to be my Italian spin on this classic dish! You can't tell me that THIS is boring.

-Chicken Enchilada-
Make your chicken into a Mexican sensation with this enchilada recipe that's not only full of flavor, but it's also extremely healthy!

-Spaghetti Squash Pasta with Chicken and Roasted Vegetables-
I love using herbs, garlic and olive oil to make this dish perfect! Many of us are trying to watch what we eat, but who says you can't have fun with it? The spaghetti-squash makes it so you can have your pasta and chicken without feeling guilty!

-Creamy Chicken and Mushroom Lasagna-
This is a yummy Italian treat that takes your old fashioned lasagna and turns it into a chicken sensation that won't disappoint!

-Asian Chicken Salad-
This is the perfect way to spice up a traditional chicken salad, especially if you are in the mood for Asian cuisine! Why spend money on take-out when you can use what's in your kitchen?
