RECIPE for “LOW-SUGAR/PECTIN-FREE STRAWBERRY JAM”
(Recipe makes six 8-oz jelly jars; adapted from www.mellisaknorris.com)
- 8 cups firm organic strawberries
- 1 1/2 cups organic sugar
- 3 organic lemons, juice and zest
Note: If storing in sterilized jars, follow instructions for process; alternately you may freeze in glass jars
- Rinse and hull strawberries
- In large stock pot, zest peel and squeeze juice of lemons
- Over medium heat, stir in sugar then bring to a boil. Sugar will become syrup-like
- Remove from heat and add strawberries
- Mash with a potato masher or other kitchen utensil
- Combine well with sugar then let sit for 15 minutes
- Return to heat and bring to a boil, stirring frequently, for 5 minutes or until jam sets
At this point, the jam may be placed in jars. Follow instructions if using sterilized jars.
